Tiff's Super Simple Enchilada Bake -



I love LOVE enchiladas & I have an all day version that is such a process that when I make it I usually go all out - making 5-6 pans worth of chicken enchiladas EASY! I make 1 for us & a couple family members while still having at least a couple to put in the freezer or put aside for when another Mama needs a helping hand.

So this easier "enchilada bake" I configured so I could instruct the hubby on the how to (I'm pinned down with a hurt leg & a needy twin) & look what's in the oven baking already! Can't wait to dig in & taste!


This top picture shows what the final result turned out like! Not bad for my hands not being involved AT ALL except for instruction from another room! Good job hubby! You did excellent & it tastes great!

Tiff's Super Simple Enchilada Bake -
Ingredients & what you need:
19x9 Glass Pyrex style pan
a preheated 350 degree oven
1 can mild enchilada sauce
6-8 Medium tortillas of your choosing (Corn, flour, or wheat) 
1 lb. Pre-browned or cooked meat - either shredded beef, ground beef, shredded or chopped chicken, or shredded pork) - drain excess grease
1 diced & sauteed onion
1/4 cup taco seasoning plus 1 cup water
2 Tbsp granulated garlic
1 can diced tomatoes - drained
4 cups shredded cheese
1 can sliced olives - drained
Optional:
1 can corn drained
1 can beans (black or white) - drained & rinsed

Instructions: This assembles just like lasagna!
In a pan on medium heat combined the meat, sauteed onion, taco seasoning, & water - cook on medium heat about 10 minutes, stirring occasionally until almost all liquid is absorbed. Set aside.

In the 13x9 pan drizzle a little enchilada sauce to cover a thin layer on the bottom (to prevent sticking) then begin layer your filling ingredients below ...
-2 tortillas to cover pan area (use another if needed)
- a layer of sauce
- some of your meat mixture
- 1 cup of your cheese
- some beans & corn (I usually just premix them to save time)
-some tomatoes

REPEAT - 2 tortillas, sauce, meat mix, 1 cup cheese, beans, corn, tomatoes
(usually your pan is only deep enough for 2 filling layers but if you have an extra deep pan sometimes you could put more layers but I've written this for just 2 filling layers)

FINISH with your topper layer of only 2 tortillas, sauce, TWO cups cheese, & sliced olives

Place in oven & bake at 350 degrees for approx. 45 mins until hot throughout & golden brown - IF IT BEGINS TO GET TOO BROWN COVER WITH FOIL!

We enjoy it with either a dollop of sour cream or salsa, Mexican rice, & veggies

NOTE: THIS RECIPE CAN BE COVERED IN FOIL BEFORE BAKING & STORED IN EITHER THE FREEZER OR FRIDGE.  IF FROZEN DEFROST IN FRIDGE OVERNIGHT BEFORE BAKING DAY!
